Meijer Healthy Living Recipes: Eat Right With Color 3-17-2011

This year's National Nutrition Month theme encourages consumers to remember to include a colorful variety of fruits, vegetables, whole grains, lean proteins and dairy on their plates every day.
Mozzarella Pin-Wheel Salad Serves 1
Ingredients:
1 handful of mixed greens 1 cup colorful fingerling potatoes, roasted with fresh herbs ¼ cup radishes, sliced 1 sheet of flat mozzarella 2 oz. Nova Lox Atlantic Salmon (1/2 of a 4 oz. pkg.) 1/2 tomato, thinly sliced 3 fresh basil leaves
Directions:
Lay sheet of mozzarella flat on cutting board. Layer with salmon, tomato, and basil. Roll mozzarella filled with toppings into a thick cigar shape. Slice into 1-inch pin wheels and set aside. Place mixed green on a plate and top with potatoes, and radishes. Place pin-wheels on top of greens mixture and drizzle with Meijer Extra Virgin Olive Oil and balsamic vinegar. Serve.

Super Easy Guacomole Serves 4
Ingredients:
2 ripe avocados, mashed 1 small jar Meijer Organics Salsa 2 tsp. lime juice 1 tsp. sea salt ½ tsp. pepper
Directions:
