Tips for cooking the best turkey

People all across the country will be preparing turkey dinners for Thanksgiving.

TV5 talked to an expert to get some tips on making the best turkey dinner.

"We have about 7,000 people that we'll serve and hundreds on staff that day," said David Tenney, kitchen manager at Zehnder's in Frankenmuth.

The restaurant, which specializes in chicken is changing its gears and talking turkey for its annual Thanksgiving dinner. They serve more than 6,000 pounds of turkey for one of their busiest business days.

"Turkey itself, you run the risk of salmonella and things so you want to make sure, we have to monitor our thawing processes and make sure we're in the window and we're not in the danger zone with any of our temperatures. And when we do cook them we make sure that we pull them out and temp every piece, every bird," Tenney said.

There are different techniques for the oven versus the roaster.

"Difference between an oven and a roaster depends. The roaster you won't have to do a lot of basting and things because there's moist heat in there, where the oven you have a lot of dry heat. Have to take it out and baste it if you like," Tenney said.
